"Another wonderful example of the outstanding chardonnays coming off this established Margaret River vineyard. Follows a line of handpicking and whole bunch pressing with wild fermentation and nine months in oak. The primary fruit of grapefruit and cut lime with some light brioche reveal their subtle qualities on the nose. The palate has a steeling linear feel to it but that in many ways conceals its sustained power and intensity. A precise and focussed wine with so much potential. Cellar 10 years."

Colour Dark ruby red

Nose Vibrant notes of blackcurrant, black cherry and dark chocolate

Palate Full bodied and structured, the palate is framed with firm but silken tannins. Rich blackcurrant, black cherry fruits complement classic Margaret River characters of bay leaf and lavender. Secondary oak notes of dark chocolate and cigar box add richness and complexity before a long structured finish.

Hand-picked, hand-plunged in open top fermenters. 18 months maturation in oak. 50% new, 50% 1 year old French barriques.

Cellaring This fragrant style is approachable as a young wine but with some bottle maturation will evolve into a beautifully complex wine. This blend has a track record thus it will continue to evolve for a further 20+ years under suitable cellaring conditions should you want to cellar it for an extended period, although medium-term cellaring also brings rewards.

Serving Suggestion Cabernet Sauvignon pairs well with hearty dishes like grilled steaks, lamb chops, stews or dishes with rich tomato-based sauces. Aged cheeses, especially those with a bit of funk, can also complement the wine's robustness and big flavours.
