2021 Cabernet Merlot

VINTAGE  2021 - a cooler vintage by Margaret River standards resulting in wines with heightened aromatics and bright natural acids.

APPEARANCE Deep crimson red.

AROMA Blackcurrant, raspberry and mulberry fruits lead into savoury notes of black olive, cocoa and roasted meats.

PALATE The medium weighted palate unfolds in layers of fruit, savoury herbs, dark chocolate, and exotic oak spice.  A soft and juicy mid-palate is supported by a framework of plush tannins which add structure and length.

OAK DETAIL 18 months maturation in a combination of 15% new and 85% seasoned French oak barriques from a selection of renowned Bordeaux cooperages.

CELLARING This finely structured wine is drinking well now, but will continue to evolve over the next 5-6 years.
